Green capsicums, harvested before they are fully ripe. They continue to first turn yellow and then red if they are left on the plant to mature. They have a slightly bitter flavor and never have the sweet taste of their red, yellow and orange counterparts.
Storage: Store capsicums in plastic bags and they will keep up to five days in a fridge. The green capsicum will keep slightly longer than the other, riper, varieties. They should not be stored near ethylene-producing food such as pears or apples! Also suitable for home freezing.
