  • 1 Preheat oven to 400°F (200°C). Chop the salad vegetables lengthwise and lay them on the baking tray. Add some Rosemary leaves and chopped garlic.
  • 2 Drizzle on oil and sprinkle on salt and pepper.
  • 3 Lay the chicken on the second tray, season with salt and pepper, and spread on the pesto. Top with tomato slices.
  • 4 Bake the trays for 25-30 minutes or until internal temperature of chicken reaches 165˚F (75˚C).
  • 5 Enjoy!

Ingredients

  • 1 Organic Coconut Layer
  • 2¾ cup organic coconut milk
  • 3¼ cup water
  • 42g organic Agar Agar
  • 53 tbsp natural Sugar
  • 6A pinch of organic salt .
  • 7Fruit Layer: 1 Cup Tender Coconut Water, 2g Agar Agar, 2 cups small fruit pieces of your choice (mango, red papaya, lychee, kiwi, strawberries and blueberries)
  • 6Juice Layer: 1 cup juice (Apricot), 2g Agar Agar powder.
