Energizing Vegan Beetroot Ginger Soup recipe

1 Cut the Organic beetroot into bite-sized chunks.

2 Heat 1 tbsp Organic virgin olive oil in a large pot over a medium heat. Sauté́ the Organic leeks, Organic celery and Organic ginger for 10-15 minutes, until softened and starting to caramelize. Stir in the Organic beetroot, then the stock and bring to the boil. Season, simmer for 20 minutes, then take off the heat and leave to cool for 10 minutes.

3 Add the Organic lemon juice, Organic coconut cream and blend the soup. Whizz (in batches, if necessary) until smooth, adding more seasoning and lemon juice as required, and a little water to loosen, if needed. Serve in bowls with a spoonful more cream and a scattering of dill.
