1 Heat a pan over medium-low heat.

2Once the pan is hot, add the Organic virgin olive oil and swirl to coat the pan. Add the Organic red onion, Organic bell pepper, Organic salt, Organic garlic and Organic pepper. Sauté until the onion is almost translucent.

3 Add the Organic cumin powder and Organic chili powder.

4Pour in the Organic crushed tomatoes and add the Organic bay leaf. Simmer for 10-15 minutes.

5Stir in the Organic baby kale until wilted.

6 Reduce the heat to low, then carefully crack the eggs into the sauce. Cover and simmer until the egg whites are set, about 10-12 minutes.

6 Top with the Organic feta cheese and remove the pan from the heat.
