  • 1 Preheat the oven at 175°C/347°F.
  • 2 Place the organic beet root cubes on a lined baking tin, rub with organic olive oil and roast for 30 minutes.
  • 3 Remove from the oven and set aside to cool.
  • 4Place the roasted beets in a food processor and pulse two or three times - you need some texture for the burgers, so make sure you don't mash them completely.
  • 5Transfer the beets into a large bowl, add all the other ingredients and stir to combine. If the texture is too mushy add more bread crumbs until you obtain the desired consistency.
  • 6 With slightly wet hands, shape the beet burgers and place them on a lined baking sheet.
  • 6 Bake in the oven for 15 minutes on one side, then flip over and bake for 15 more min.
  • 7 Place the organic sweet potato strips on a lined baking sheet, rub with organic olive oil, than sprinkle with organic corn flour
  • 8 Bake for 25-30 minutes, or until golden brown. They will be ready in the same time with the burgers.
  • 9 While the burgers are baking, prepare the dressing. Place all the ingredients in the food processor and process to obtain a creamy sauce.
  • 10 Cut the bun in halves, spread bun bases with dressing, add the beet burger and top generously with avocado dressing, organic lettuce.

  • 1 2 cups organic beet root, peeled and cut into cubes
  • 2 1 cup organic red quinoa, cooked
  • 3 1 tbsp organic virgin olive oil
  • 4 1 organic free range egg
  • 5 1 organic onion, finely diced
  • 6 2 organic garlic cloves, crushed
  • 7 2 tbsp organic bread crumbs
  • 8 1 tbsp organic flax seeds
  • 9 2 tsp organic lemon juice
  • 10 ¼ tsp organic chili flakes
  • 111 tsp organic salt · FOR THE DRESSING
  • 12 1 ripe organic avocado
  • 13 2 tbsp organic tahini · 3 tbsp organic lime juice
  • 14 1 organic garlic clove
  • 15 ¼ tspn organic salt · FOR THE FRIES
  • 16 2 organic sweet potatoes
  • 17 1 tbsp organic olive oil
  • 18 1 tbsp organic cornflour · FOR ASSEMBLING
  • 194 organic burger buns
  • 20 1 bunch of organic lettuce
